Bolo De Aniversário

Esse foi o meu bolo de aniversário ! :) Deu um trabalhão fazê-lo, mas acho que valeu a pena... Além de ter ficado lindo, ficou uma delícia (mais importante né, rs) ! Não sobrou nem uma fatia pro dia seguinte :/ Exatamente 10 dias depois de eu ter completado 28 anos, segue o processo...

Como eu usei uma fôrma que divide o bolo em duas cores, fiz duas massas: uma de chocolate e uma de baunilha. E fiz as duas ao mesmo tempo, pra poder colocar no forno no mesmo momento (e não deixar a massa descansando um tempão antes de assar). Isso foi o que me quebrou, rs. Fazer duas massas ao mesmo tempo não foi mole não... Separar os ingredientes, peneirar os ingredientes secos... Enfim. Foi tenso, mas deu certo. Como usei uma receita inteira de cada massa (chocolate/baunilha) pra fazer 2 bolos finos, e o bolo no total era composto por 3 bolos finos, o último foi feito assim: fiz meia massa de chocolate e 1/3 da massa de baunilha. Foi nessa que eu me dei um pouco mal, (como vocês podem observar pela cor da última (contando de cima pra baixo) massa de chocolate... Acabei calculando mal e foi mais chocolate que deveria, rs. A fôrma que usei foi essa:

E depois de assadas, saem assim:



O terceiro bolo eu esqueci de registrar, foi mal :/ Mas ele ficou como o primeiro, com duas partes de chocolate e uma de baunilha. Porém, como disse aí acima, eu errei na mão e a massa ficou mais escura...
Bom, com os bolos prontos, é só rechear e cobrir. Usei um brigadeiro de chocolate com nozes que ficou uma delicia ! A receita do brigadeiro está aqui, os créditos da receita vão pra Renata Veg Vida/Las Vegans. Eu só adicionei nozes picadas ao brigadeiro quando ele estava quase pronto.

A receita do bolo de chocolate, retirei do livro "The Joy of Vegan Baking" (vocês podem ver mais amostras de receitas desse livro aqui.

Chocolate Cake

Ingredients
  • 1-1/2 cups (188 g) unbleached all-purpose flour
  • 3/4 cup (150 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup (30 g) unsweetened cocoa powder
  • 1-1/2 teaspoons vanilla extract
  • 1/3 cup (80 ml) canola oil
  • 1 tablespoon white distilled vinegar
  • 1 cup (235 ml) cold water
Preheat the oven to 350° F (180° C or gas mark 4). Lightly oil a Bundt pan, 9-inch (23 cm) springform pan, or muffin tins.
Combine the flour, sugar, salt, baking soda, and cocoa powder in a bowl until thoroughly combined. Create a well in the center of your dry ingredients, and add the vanilla, oil, vinegar, and water. Mix until just combined. Pour into your prepared pan, and bake in the preheated oven for 30 minutes, until a toothpick inserted in center comes out clean. If making cupcakes, check for doneness after 15 minutes.
Cool on a wire rack. To remove the cake from the pan, run a sharp knife around the inside of the pan to loosen the cake. Cool completely before frosting with Chocolate Frosting (see below) or with Buttercream Frosting (page 231). You may also dust with sifted confectioner's sugar and top with fresh raspberries.

Yield: One 9-inch cake (23-cm) or 8 cupcakes. Double the recipe for a layer cake or a bundt cake.

A receita do de baunilha eu retirei do "Vegan Cupcakes Take Over The World", só que ao invés de usar formas para cupcake, usei uma forma redonda de 23 cm.



A receita de Baunilha é essa:

Ingredients

1cup soy milk
1tsp. apple cider vinegar
cups all-purpose flour
2Tbsp. cornstarch
¾tsp. baking powder
½tsp. baking soda
¼tsp. salt (increase salt to ½ teaspoon if you’re using oil instead of margarine)
½cup non-hydrogenated margarine, softened, or ⅓ cup canola oil
¾cup sugar
2tsp. vanilla extract
¼tsp. almond extract, caramel extract, or more vanilla extract

Steps

  1. Preheat oven to 350 degrees. Line muffin pan with cupcake liners.
  2. Whisk the soy milk and vinegar in a measuring cup and set aside for a few minutes to get good and curdled.
  3. If using margarine: Sift the flour, cornstarch, baking powder, baking soda, and salt into a large bowl and mix.
  4. In a separate large bowl, use a handheld mixer at medium speed to cream the margarine and sugar for about 2 minutes until light and fluffy. (Don’t beat past 2 minutes.) Beat in the vanilla and other extract, if using, then alternate beating in the soy milk mixture and dry ingredients, stopping to scrape the sides of the bowl a few times.
  5. If using oil: Beat together the soy milk mixture, oil, sugar, vanilla, and other extracts, if using, in a large bowl. Sift in the flour, cornstarch, baking powder, baking soda, and salt, and mix until no large lumps remain.
  6. Fill cupcake liners two-thirds of the way and bake for 20 to 22 minutes. Transfer to a cooling rack, and let cool completely before frosting.
